Summary: Prepare exceptional cuisine for owners and their guests.

Supervisory Responsibilities: None.

Essential Duties and Responsibilities include the following, and other duties may be assigned:

  • Plan, prepare, and present restaurant-quality meals for owners and guests, including breakfast, lunch, dinner, and snacks
  • Accommodate diverse dietary requirements, preferences, and restrictions with creativity and professionalism
  • Manage all galley operations, including inventory management, provisioning, and food storage
  • Maintain the highest standards of food safety, hygiene, and cleanliness in accordance with maritime regulations
  • Create custom menus that reflect seasonal ingredients, guest preferences, and local specialties from various ports
  • Coordinate with crew members to ensure seamless meal service
  • Manage food budgets and minimize waste while maintaining premium quality
  • Adapt cooking techniques to the challenges of a galley kitchen in varying sea conditions
  • Handle special occasions and events with appropriate menu planning and presentation

Qualifications:

Desired Education/Experience and Certifications:

- Culinary degree or equivalent professional training preferred

- Minimum 3-5 years of professional cooking experience in fine dining, private estates, or yacht environments

- Food safety certifications as required by the Captain

- Strong knowledge of a variety of cuisines and current culinary trends

- Experience with menu planning and dietary accommodations (allergies, vegan, gluten-free, etc.)

Reasoning Ability:

Ability to apply common sense understanding to carry out instructions. Ability to deal with complex situation situations. Ability to work in fast-paced environment with shifting priorities.

Math Ability:

Ability to add, subtract, multiply and divide.

Communication Skills:

Ability to understand and follow instructions. Ability to communicate effectively with guests and crew. Strong interpersonal skills. Ability to receive direction and take action.

Attendance Expectations:

This position requires scheduled shifts may include evening hours, weekends, and holidays. Extensive travel is required onboard ship.

Physical Demands:

Ability to work in a moving environment and adapt to sea conditions. Capable of lifting up to 50 pounds. Stamina to stand for extended periods. Ability to safely operate any item in kitchen. Frequent bending, squatting, twisting, turning, reaching, pulling, pushing, and walking is required.

Environment Demands:

Duties are primarily performed on sailing vessel. Must be able to work in confined spaces for prolonged periods of time.

Verbal and Writing Ability:

Ability to read and comprehend instructions, correspondence, and memos. Ability to receive and communicate with crew and guests courteously, efficiently, and professionally.
